Nose<\/b>On the nose its black fruit profile stands out (blackberries, blueberries) with hints of black liquorice and balsamic notes.<\/span><\/div>\n<\/div>\n

Palate<\/b>On the palate the attack is soft, luscious and fruity, with a long and persistent finish.<\/span><\/div>\n<\/div>\n

Pairing<\/b>A perfect pairing with red meats, hearty one-pot dishes, roasts and mature cheeses.<\/span><\/div>\n<\/div>\n

Winemaking<\/h3>\n

The raw material is a selection of the best fruit from their most representative plots at 710 metres of altitude, with an extremely low yield of barely 1,500 kg\/ha. Careful winemaking is followed by twelve months' ageing in new 500-litre French oak barrels. Very limited production of barely 6,000 bottles.<\/p>\n
