Tasting note

AppearanceTo the eye it has a beautiful cherry red colour with violet tones.

NoseMedium to high in depth with a well-covered rim, it is clean and bright. On the nose it is complex and persistent, with notes of stewed cherry and other ripe fruits such as blueberries and plums. It has notes of toast, smoke and roasted coffee over a mineral, spiced base. There are also woods and aromatic herbs.

PalateOn the palate the attack is powerful and broad, yet agreeable across the palate. Good acidity and sweet, perfectly integrated tannins. Again the sensations of fresh and stewed fruit arrive, with roasted and smoky hints that complete a most surprising and enjoyable bouquet.

PairingIdeal with rice dishes, grilled meats and small game, and also with the partridge pâté typical of the area.

Winemaking

Exceptionally careful winemaking, with a long pre-fermentation maceration followed by an equally long alcoholic fermentation in Manchegan clay tinajas. The malolactic and the subsequent twelve months' ageing take place in new French oak barrels from the world's most prestigious cooperages, such as Taransaud and Radoux.

House recommendation

We recommend uncorking and decanting one hour beforehand to enjoy the wine at its fullest. And serving it in a wide glass between 14ºC and 16ºC.
