The white version of El Linze offers a wine that is every bit as singular and appealing. It has a clearly wintry white wine profile in which the barrel is very present, accentuating its unctuousness and volume on the palate, yet well balanced by good acidity and that tropical note from the viogner that makes it so original and moreish.

Winemaking
The varieties are vinified separately. Pre-fermentation maceration and fermentation in barrel. It then has nine months' ageing on its own lees and is bottled all in one lot. It is a white wine for keeping, made to drink now but which will hold and even improve over many years in bottle. Very limited production.
House recommendation
Serve in a wide glass between 9ºC and 12ºC.
