Dédalo Pieles

A lovely orange wine, ideal for stepping into the fascinating world of white varieties made in contact with their skins. It has that typical, playful profile of this style of wine: on the nose it shows ripe fruit such as apricots with honeyed notes, and yet on the palate it is absolutely dry, and this one in particular is also very broad and persistent.

Winemaking

Half the fruit macerates on its skins in clay tinajas more than 300 years old, buried in the vineyard itself (the traditional method used for the Georgian orange wines that are still regarded as the founders of this style thousands of years ago). The other half macerates on its skins in 8,000-litre clay tinajas in the winery. Fermentation is with indigenous yeasts, with no added sulphites and no correction of any kind. Once fermentation is complete the wine stays four months in contact with its skins, with daily punch-downs to draw out more colour and polyphenols. The wine is then drawn off completely clear, using the skins themselves as a filter. Finally it is aged for fifteen months in French oak barrels until bottling.
