Tulonio is the Celtiberian god who later became Toloño, believed to protect the district from the misfortunes that came from the north; hence what is known today as the Sierra de Toloño or Sierra de Cantabria. This is one of Carlos Fernández's most singular wines, as much for its variety as for the way it is made, but above all for the result.

Tasting note
Winemaking
The grapes for this wine, of the Cariñena Blanca, Mazuelo Blanco or Mazuela variety, come from the El Convento vineyard, on calcareous soil with river stones. Half the wine goes into a 500-litre porcelain egg as whole bunches, and the other half is destemmed, pressed and added to the same vessel. As fermentation proceeds, the whole grapes gradually burst. The whole process, between maceration, fermentation and ageing, lasts around eight months in this singular vessel. In the end barely 500 bottles of this marvel are filled.
