Tasting note
AppearanceViolet cherry in colour.
NoseAromas of wild hedgerow fruit, blue flowers (lavender) and balsamic notes.

Winemaking
It is made by the “carbonic maceration” method traditional to the Rioja Alavesa. That is to say, whole bunches are placed in concrete tanks in an atmosphere saturated with CO2, to induce a dry, very slow intracellular fermentation inside each grape. It is then pressed and stays in concrete tanks until bottling.
House recommendation
Serve at 14ºC.
