Winemaking
Bunch selection in the vineyard. Spontaneous fermentation and minimal intervention in small stainless steel tanks, after which the malolactic takes place 50% in concrete and 50% in French barrel. Fourteen months' ageing in 225-litre French oak barrels, of which 50% are new and 50% second use. It stays a minimum of six months in bottle before release.

Serve at 14ºC in a wide glass.
